Wine Making: The grapes are harvested at optimum maturity.
They are then destemmed and macerate cold with a longer or shorter duration depending on the desired color intensity.
After a pressing adapted to the different grape varieties and a settling, the must ferments with a control of the temperatures to favor the expression of the fruit.
At the end of the alcoholic fermentation, the wines are racked twice and then assembled. They are then aged in cooling tanks for 4 months before bottling.
Located in the town of Générac, a dozen kilometers from the ancient city of Nimes, the castle owes its name to the many hunting parties that took place in the early twentieth century on its vineyard very game. This property of more than 20 Ha belongs to the Larguier family for several generations.
