Climate: Semi-continental, not knowing excessive rigor in the winter, or severe heat in summer. The soil is mainly composed of Tuffeau, completed with granite sand, clay and flint. Very close by its characteristics of the soil champagne, this soil brings a little balance between acidity (limestone) and taste “territory” (clay).
Vinification and aging: The essential is a traditional method, preserved on slats in our underground cellars, at a constant temperature of 12 ° C, for 36 months. This long period of maturation after the foam (second fermentation) is one factors essential to the quality of this cuvée and its extreme elegance. This cuvée is a return to the origins of method wines traditional: not dosed, it sublimates the essence of the aromas of Chenin Blanc, whose complexity it highlights.
