Vinification :
The grapes are harvested at optimum maturity. When pressed, the grape juice is kept at a low temperature. This process allows the total expression of the aromas of the grapes. The fermentation is started after 5 to 6 days, the juice ferments at a temperature between 15 and 17 degrees. This technique allows us to reveal fresh aromas. Then comes a period of aging on fine lees.
About the winery: Started in 1929, four generations have inherited this vineyard in the region of Bordeaux. The exploitation showed excellence and elegance: correcting the idea perceived across the Atlantic to think that a “good Bordeaux is an expensive Bordeaux”. Throughout years the vintages produced reflect a family adventure. And their skills and knowledge have continuously been used in their vocation of making wine.
