Wine Making: The grapes are harvested at optimum maturity. They are then stalked.
Maceration from 18 to 20 days with a perfect control of the temperature and a gentle extraction of the various aromatic and polyphenolic compounds (reassembly and shedding).
Breeding – After the malolactic fermentation the wines are drawn twice and then assembled. They are then aged in vats for 8 months.
About Winery:
Located in the town of Générac, a dozen kilometers from the ancient city of Nimes, the castle owes its name to the many hunting parties that took place in the early twentieth century on its vineyard very game. This property of more than 20 Ha belongs to the Larguier family for several generations.
